Ingredients

butter

Vidalia onion
sliced or diced

pie shell**
½
cup
Swiss cheese
2
eggs
1
cup
half and half
1/4
teaspoon
salt
½
teaspoon
dry mustard
¼
teaspoon
cayenne
3
tablespoons
parmesan cheese
¼
teaspoon
paprika
Instructions
Preheat oven to 400° F.
Sauté onions in butter until limp. Place in pie shell. Top with Swiss cheese.
Combine next five ingredients and pour over top of cheese. Top with parmesan and paprika.
Bake at 400°F for 15 minutes. Reduce heat to 325°F and cook an additional 25 minutes.
Notes
** If using frozen pie shell, prick bottom with a fork and bake at 350° for 5 minutes, cool before filling.
