In a medium mixing bowl, combine egg, bread crumbs, cilantro, parsley, garlic, red pepper and 1/4 teaspoon salt. Add the beef and peanuts. Mix well. Shape into small balls. Place in a shallow baking pan or on a baking sheet. Bake in a 350° oven for 20 minutes, or until no longer pink. (If making meatballs ahead; Cool meatballs, cover and chill up to 48 hours.)
