Kathleen’s Lemon Bars

Ingredients
  

  • ¾ cup 1 ½ sticks unsalted butter, softened
  • 1 ½ cups sifted all-purpose flour
  • 1/3 cup sugar
  • Topping
  • 4 large eggs
  • 5 tablespoons all-purpose flour
  • 2 cups sugar
  • ¾ cup fresh lemon juice

Instructions
 

  • heat oven to 350°.
  • Combine butter, flour, and sugar. Press mixture into unbuttered 13 by 9-inch pan.
  • Bake for 20 minutes, until just turning brown.
  • For topping, lightly whisk eggs. Sift together flour and sugar; Add two eggs. Add lemon juice, stir, and pour over partially baked base.
  • Bake for 20 minutes more, or until top is firm. Chill before cutting.
