Hungarian Spiced Nuts

Ingredients
  

  • 2 egg whites
  • 1 ½ teaspoon salt
  • ¾ cup sugar
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons Hungarian sweet paprika
  • 1 ½ teaspoons cayenne
  • 2 cups fancy mixed nuts
  • ¾ stick unsalted butter melted

Instructions
 

  • Preheat oven to 325°F
  • with electric mixer, or handheld mixer, beat egg whites with salt until very foamy. Beat in sugar, paprika, and cayenne pepper; add Worcestershire. Fold in nuts and butter.
  • Bake on cookie sheets lined with parchment paper or a Silpat. Bake for 30 to 40 minutes. Stir every 10 minutes until crisp and golden. Do not overcook. The spiced nuts will look wet but will crisp up when they cool.
  • Let nuts cool on foil on a wire rack Break up and store in airtight container at room temperature.
