with electric mixer, or handheld mixer, beat egg whites with salt until very foamy. Beat in sugar, paprika, and cayenne pepper; add Worcestershire. Fold in nuts and butter.
Bake on cookie sheets lined with parchment paper or a Silpat. Bake for 30 to 40 minutes. Stir every 10 minutes until crisp and golden. Do not overcook. The spiced nuts will look wet but will crisp up when they cool.
Let nuts cool on foil on a wire rack Break up and store in airtight container at room temperature.
