Honey-Mustard Slaw

- 8 cups shredded red and/or green cabbage about 1 head
- 2 medium carrots shredded
- 2 cups snow peas cut in thirds on the diagonal
- ½ cup red onion chopped
- 1/3 cup coarse grain mustard or Dijon
- ¼ cup vegetable oil
- ¼ cup lemon juice
- ¼ cup honey
- 2 cloves garlic minced
- Salt & pepper to taste
- 3 tablespoons chopped nut
In a large bowl stir together cabbage, carrots, snow peas, and onion. For dressing, in a screw top jar combine the next 5 ingredients. Cover and shake well. Adjust with salt and pepper. Shake well; pour over cabbage mixture.
Toss lightly to coat. Cover; chill 2 to 24 hours, stirring occasionally.
Before serving, stir slaw and top with chopped nuts.
