Hoisin Pork Napa Slaw

Ingredients
  

  • ½ cup fish sauce nam pla
  • 2 tablespoons lime juice
  • ½ cup rice wine vinegar
  • 1 ½ teaspoon crushed red pepper flakes
  • 8 large basil leaves cut lengthwise into 1/4 inch wide ribbons
  • 1 ½ teaspoons sugar
  • 3 cups Napa cabbage cut into 1/2 inch ribbons 1 medium head
  • 1 cups shredded carrots
  • 1 cup bean sprouts
  • 1/2 cup very thinly sliced scallions green parts only
  • salt and freshly ground pepper to taste

Instructions
 

  • in a large bowl, whisk together the fish sauce, vinegar, pepper flakes, basil and sugar. Set aside.
  • In a large bowl, combine the cabbage, carrots, bean sprouts and scallions and toss well.
  • Add some of the dressing and toss well. Season with salt and pepper to taste and set aside for a few minutes before serving.
  • Add more dressing if desired. Refrigerate the remaining dressing.
