Ingredients

red bliss potatoes
unpeeled

Chablis or dry white wine

olive oil

tablespoons
wine vinegar
1 ½

Dijon mustard

teaspoon
salt
¼
teaspoon
tarragon
¼
teaspoon
white pepper
cayenne or black pepper can be substituted
¼
cup
thinly sliced green onions
¼
cup
minced fresh parsley
Instructions
Wash and scrub potatoes. Cook in boiling water to cover. 12-15 minutes or until just tender; drain and cool slightly.
Cut into ¼-inch slices. Add wine and toss gently. Let stand for 10 minutes.
Combine olive oil and next five ingredients; stir well. Pour over the potato mixture. Add onions and parsley; toss gently. Chill if desired.
Serve on a lettuce lined platter (optional)
