French Style Potato Salad

Ingredients
  

  • 14 red bliss potatoes unpeeled
  • 3 tablespoons Chablis or dry white wine
  • ¼ cup olive oil
  • 2 tablespoons wine vinegar
  • 1 ½ tablespoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon tarragon
  • ¼ teaspoon white pepper cayenne or black pepper can be substituted
  • ¼ cup thinly sliced green onions
  • ¼ cup minced fresh parsley

Instructions
 

  • Wash and scrub potatoes. Cook in boiling water to cover. 12-15 minutes or until just tender; drain and cool slightly.
  • Cut into ¼-inch slices. Add wine and toss gently. Let stand for 10 minutes.
  • Combine olive oil and next five ingredients; stir well. Pour over the potato mixture. Add onions and parsley; toss gently. Chill if desired.
  • Serve on a lettuce lined platter (optional)
