Polynesian Meatballs with Sweet and Sour Sauce

Ingredients
- MEATBALLS
- 1 egg beaten
- ¼ cup bread crumbs finely crushed
- 1 tablespoon fresh cilantro chopped
- 2 tablespoons fresh parsley chopped
- 2 cloves garlic minced
- ¼ teaspoon cayenne
- ¼ cup dry-roasted peanuts finely chopped
- ½ pound sausage meat hot and sweet, optional
- 1 pound ground beef
- 1 14- oz can pineapple chunks in juice drained (reserve liquid)
Instructions
- Preheat oven to 350°F.
- In a medium mixing bowl, combine egg, bread crumbs, cilantro, parsley, garlic, red pepper and 1/4 teaspoon salt. Add the beef and peanuts. Mix well. Shape into small balls. Place in a shallow baking pan or on a baking sheet. Bake in a 350° oven for 20 minutes, or until no longer pink. (If making meatballs ahead; Cool meatballs, cover and chill up to 48 hours.)
- Combine meatballs, pineapple chunks and Sweet and Sour Sauce.
