Kathleen’s Lemon Bars
Ingredients
- ¾ cup 1 ½ sticks unsalted butter, softened
- 1 ½ cups sifted all-purpose flour
- 1/3 cup sugar
- Topping
- 4 large eggs
- 5 tablespoons all-purpose flour
- 2 cups sugar
- ¾ cup fresh lemon juice
Instructions
- heat oven to 350°.
- Combine butter, flour, and sugar. Press mixture into unbuttered 13 by 9-inch pan.
- Bake for 20 minutes, until just turning brown.
- For topping, lightly whisk eggs. Sift together flour and sugar; Add two eggs. Add lemon juice, stir, and pour over partially baked base.
- Bake for 20 minutes more, or until top is firm. Chill before cutting.
