Honey-Mustard Slaw

Ingredients
  

  • 8 cups shredded red and/or green cabbage about 1 head
  • 2 medium carrots shredded
  • 2 cups snow peas cut in thirds on the diagonal
  • ½ cup red onion chopped
  • 1/3 cup coarse grain mustard or Dijon
  • ¼ cup vegetable oil
  • ¼ cup lemon juice
  • ¼ cup honey
  • 2 cloves garlic minced
  • Salt & pepper to taste
  • 3 tablespoons chopped nuts

Instructions
 

  • In a large bowl stir together cabbage, carrots, snow peas, and onion. For dressing, in a screw top jar combine the next 5 ingredients. Cover and shake well. Adjust with salt and pepper. Shake well; pour over cabbage mixture.
  • Toss lightly to coat. Cover; chill 2 to 24 hours, stirring occasionally.
  • Before serving, stir slaw and top with chopped nuts.
