Chicken Caribe

Ingredients
- Chicken cooked and shredded, pulled or chopped
- 1 small red onion sliced
- 1 can diced tomatoes
- 1-2 tomatoes or 4-5 plum tomatoes
- 1-2 cloves garlic minced
- ½ cup red wine vinegar
- ½ cup soy sauce
- ½ cup white wine
- ½ cup chicken broth
- ½ lb dried pasta cooked and drained
- Corn starch and chicken broth slurry optional
- OPTIONAL
- Cayenne pepper Sambel Oelek (Chili pepper paste)
Instructions
- Here is the way I usually make it:
- I start with my ‘mise en palce’
- (If raw) Chicken breast butterflied and seasoned with salt & pepper
- Sliced red onion, sliced tomato, minced garlic
- In Pyrex red wine vinegar, soy sauce, chicken broth, white wine
- Can of tomatoes opened
- Slurry ready
