Susan Foresman Vegetable Pasta Salad
Ingredients
- PASTA SALAD DRESSING
- 1 cup olive oil
- 1 cup vegetable oil
- ½ cup lemon juice
- ½ cup vinegar
- 2 tablespoons Dijon mustard
- 2 teaspoons minced garlic
- 1 ½ tablespoons dry tarragon
- 1 ½ teaspoon dry oregano
- 3 tablespoons dried basil
- 2 teaspoons black pepper
- 1 teaspoon cayenne pepper
- 1 tablespoon salt
- SALAD
- 1 ½ lb corkscrew or your favorite other pasta cooked in salted water, drained and rinsed
- 7 oz red & green pepper
- 9 oz broccoli
- 7 oz broccoli stems????
- 5 oz zucchini
- 5 oz yellow squash
- 9 oz tomato
- 4 oz peas
- 5 oz red onion
- 5 oz carrots grated
- 1 ½ oz fresh basil
