Susan’s Crab Cakes

Ingredients
  

  • 2 pounds crab
  • 2 eggs slightly beaten
  • 1 ½ slices bread ¾ cup crumbs
  • 1 ½ teaspoon dry mustard
  • Salt cayenne and black pepper to taste
  • ¼ cup mayonnaise
  • FOR DREDGING
  • 2 eggs
  • Flour
  • Bread crumbs panko is available
  • Oil and butter for frying

Instructions
 

  • Gently pick through crab, removing shell but being mindful of the meat.
  • Separately mix the rest of the crabcake ingredients; fold the crabmeat into the mixture.
  • For best results, chill the mixture for about an hour.
