Susan’s Crab Cakes
Ingredients
- 2 pounds crab
- 2 eggs slightly beaten
- 1 ½ slices bread ¾ cup crumbs
- 1 ½ teaspoon dry mustard
- Salt cayenne and black pepper to taste
- ¼ cup mayonnaise
- FOR DREDGING
- 2 eggs
- Flour
- Bread crumbs panko is available
- Oil and butter for frying
Instructions
- Gently pick through crab, removing shell but being mindful of the meat.
- Separately mix the rest of the crabcake ingredients; fold the crabmeat into the mixture.
- For best results, chill the mixture for about an hour.
