Spicy Peanut Brittle
Ingredients
- Baking spray
- 1 cup sugar
- 1 cup light corn syrup
- 1 tablespoon butter
- 2 cups salted peanuts
- 1 ½ teaspoons baking soda
- 1 teaspoon chipotle powder
- Cayenne powder
Instructions
- Line a jelly roll pan with a Silpat, or foil and spray with baking spray.
- In a small bowl combine baking soda, chili powder, and cayenne.
- Combine sugar, light corn syrup, and butter in a saucepan over medium-high heat. Stir until dissolved and candy thermometer reaches 275°. Stir frequently. When candy thermometer reaches 275°F, add nuts and continue and stir until candy thermometer reaches 295°F. Remove from heat; add soda mix, stir carefully and pour into prepared sheet pan. Quickly spread into thin payer with spatula.
Notes
Let the brittle cool completely before breaking apart. Store in an airtight container.
