German Potato Salad

Ingredients
  

  • 1 ½ # russet potatoes unpeeled and cleaned well
  • 8 slices bacon chopped
  • 1 yellow onion finely chopped
  • 4 dill Pickles chopped
  • 1 cup mayonnaise
  • ½ cup cider vinegar
  • ½ cup heavy cream or half and half
  • 1 teaspoon sugar
  • 2 teaspoons Dijon mustard
  • salt and freshly ground pepper

Instructions
 

  • place the potatoes in a large saucepan and add water to cover generously. Bring to a boil and cook until tender when pierced with a fork, 20 to 25 minutes. Drain and place in a bowl. Using a wood spoon, break up the potatoes into bite sized pieces. Keep warm.
