French Style Potato Salad
Ingredients
- 14 red bliss potatoes unpeeled
- 3 tablespoons Chablis or dry white wine
- ¼ cup olive oil
- 2 tablespoons wine vinegar
- 1 ½ tablespoons Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon tarragon
- ¼ teaspoon white pepper cayenne or black pepper can be substituted
- ¼ cup thinly sliced green onions
- ¼ cup minced fresh parsley
Instructions
- Wash and scrub potatoes. Cook in boiling water to cover. 12-15 minutes or until just tender; drain and cool slightly.
- Cut into ¼-inch slices. Add wine and toss gently. Let stand for 10 minutes.
- Combine olive oil and next five ingredients; stir well. Pour over the potato mixture. Add onions and parsley; toss gently. Chill if desired.
- Serve on a lettuce lined platter (optional)
