Cucumber Salad

Cucumber Salad

Ingredients
  

  • ½ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons red chili peppers chopped
  • 1-2 cucumbers sliced
  • 2 tablespoons peanuts chopped
  • 2 tablespoons cilantro chopped
  • ½ cup shallots sliced

Instructions
 

  • Combine rice vinegar, sugar and salt in a small saucepan over medium low heat. Heat until sugar is dissolved.
  • Combine the rest of the ingredients and serve immediately.
  • If you are not serving immediately, combine all ingredients except the peanuts, cucumber and Chili Peppers. Store in refrigerator until two hours prior to serving. Toss immediately before serving.
