Black Bean & Corn Salad
Ingredients
- 1 15- oz can black beans rinsed well and drained
- 1 ½ cup fresh cooked/roasted corn kernels 3 cobs
- 2 medium tomatoes diced or small can diced tomatoes
- 1 red bell pepper diced
- 1 or 2 cubanelle peppers diced
- 1/2 cup red onion diced
- 1 to 2 fresh serrano or jalapeno peppers diced
- Fresh lime juice a few tablespoons or to taste
- Few splashes of red wine vinegar
- 1/3 cup extra-virgin olive oil
- 1/3 cup cilantro rough chopped
- 1 teaspoon ground cumin
- salt and cayenne pepper to taste
Instructions
- Combine all ingredients. Mix well.
