Black Bean & Corn Salad

Black Bean & Corn Salad

Ingredients
  

  • 1 15- oz can black beans rinsed well and drained
  • 1 ½ cup fresh cooked/roasted corn kernels 3 cobs
  • 2 medium tomatoes diced or small can diced tomatoes
  • 1 red bell pepper diced
  • 1 or 2 cubanelle peppers diced
  • 1/2 cup red onion diced
  • 1 to 2 fresh serrano or jalapeno peppers diced
  • Fresh lime juice a few tablespoons or to taste
  • Few splashes of red wine vinegar
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup cilantro rough chopped
  • 1 teaspoon ground cumin
  • salt and cayenne pepper to taste

Instructions
 

  • Combine all ingredients. Mix well.
