German Potato Salad
Ingredients
- 1 ½ # russet potatoes unpeeled and cleaned well
- 8 slices bacon chopped
- 1 yellow onion finely chopped
- 4 dill Pickles chopped
- 1 cup mayonnaise
- ½ cup cider vinegar
- ½ cup heavy cream or half and half
- 1 teaspoon sugar
- 2 teaspoons Dijon mustard
- salt and freshly ground peppe
Instructions
- Place the potatoes in a large saucepan and add water to cover generously. Bring to a boil and cook until tender when pierced with a fork, 20 to 25 minutes. Drain and place in a bowl. Using a wood spoon, break up the potatoes into bite sized pieces. Keep warm.
